摘要: Mycelial as well extracellular inulinase (2,1-β-D-fructan fructanohydrolase, ED 3.2.1.7) were produced by Fusarium oxysporum grown on the aqueous extract of Cichorium intybus roots. At 12 days growth fungus, 86% this enzyme activity was observed in medium. The enzymes partly purified Sephadex G-100 column chromatography. optimum pH and temperature for mycelial inulinases 5.8 6.2; 30°C 37°C, respectively. energy activation 40.1 kJ mol−1. molecular weight both about 300 000. High concentrations inulin did not protect against rising temperature. release oligomers or sucrose from inulin, indicating that they are primarily exo-acting. hydrolysed raffinose, but had no effect melezitose maltose. Compared with other sources, have very low Km (Michaelis–Menten constant) values (16.7 20 μmol dm−3, respectively) inulin.
