摘要: The efficacy of ozone as a water additive for washing raspberries and strawberries was investigated. Pathogen-inoculated fruits were treated with aqueous concentrations 1.7 to 8.9 mg/liter at 20 degrees C 2 64 min, an concentration 21 4 or control. Maximum pathogen reductions on 5.6 4.5 log CFU/g Escherichia coli O157:H7 Salmonella, respectively, C, whereas 2.9 3.3 E. after min. Washing (sparging air control) resulted in approximately 1 CFU/g. results presented here indicate that may be useful decontaminant small fruits.
