摘要: Five species of commercial prawns Penaeus plebejus, P. merguiensis, semisulcatus/P. esculentus and M. bennettae, were obtained from South-East North Queensland, chilled soon after capture then stored either whole or deheaded on ice slurry, until spoilage. Total bacterial counts, total volatile nitrogen, K-values demerit scores assessed at regular intervals. Their shelf lives ranged 10-17 days >20 slurry. Initial flora shallower waters (4-15m) dominated by Gram-positives had lag periods around 7 days, whereas deeper (100m) dominant in Pseudomonas spp. with no growth. The spoiler was mainly fragi the main slurry Shewanella putrefaciens. Bacterial interactions seem to play a major role patterns spoilage relation environment pattern storage
