摘要: Various approaches can be used for the nutritional evaluation of protein sources. These include human and animal bioassays microbiological, enzymic chemical in vitro methods. Examples application each these soya sources are presented evaluated this paper. The ineffectiveness rat assays predicting nutritive value humans is documented. Current procedures, based on bioassays, which labeling dietary U.S. Canada discussed alternative described. In particular, use methods estimating amino acid composition essential bioavailability may have significant advantages consumption.
