Fructan biosynthesis and degradation as part of plant metabolism controlling sugar fluxes during durum wheat kernel maturation

摘要: Wheat kernels contain fructans, fructose based oligosaccharides with prebiotic properties, in levels between 2 and 35 weight % depending on the developmental stage of kernel. To improve knowledge metabolic pathways leading to fructan storage degradation, carbohydrate fluxes occurring during durum wheat kernel development were analyzed. Kernels collected at various stages quali-quantitative analysis carbohydrates (mono- di-saccharides, starch) was performed, alongside activities gene expression enzymes involved their biosynthesis hydrolysis. High resolution HPAEC-PAD contained revealed that content is higher beginning development, when fructans DP, such as bifurcose 1,1-nystose, mainly found. The changes pool observed maturation might be part signaling influencing metabolism development. During first accumulation may contribute make more effective Suc sinks participate osmotic regulation while decrease mark transition later stages, also orchestrated by redox balance.
