摘要: This paper tabulates the sterol, phospholipid, mineral content and proximate composition of fifteen species freshwater fish [Bass, Rock (Ambloplites rupestris); Bass, White (Morone chrysops); Bullhead, Brown (Ictalurus nebulosus); Burbot (Lota lota); Carp (Cyprinus carpio); Crappie, Black (Pomoxis nigromaculatus); Drum, Freshwater (Aplodinotus grunniens); Perch, americanus); Yellow (Perca flavescens); Pike, Northern (Esox lucius); Walleye (Stizostedion vitreum); Smelt, American (Osmerus mordax); Sucker, (Catostomus commersonni); Sunfish, Pumpkinseed (Lepomis gibbosus); Trout, Brook (Salvelinus fontinalis); Lake namaycush); Rainbow (Salmo gairdneri)]. The contained an average 78, 19 1.1 percent moisture, protein ash, respectively. Potassium, phosphorus calcium averaging 400, 200 100 mg/100 g filet were predominant components. lipid contents filets ranged from 0.7 for rock bass to 7.2 lake trout with most around 2.0% lipid.
