摘要: Sustained release of antimicrobials may be a viable solution to enhance the bioavailability during shelf life food products. In this work, spray-drying was used encapsulate model antimicrobial lysozyme in corn zein. The effects zein/lysozyme (20:1 4:1) and zein/thymol (1:0 ratios on microstructures microcapsules vitro profiles encapsulated were investigated. all cases, less released at higher pH, resulting from stronger molecular attraction between zein lysozyme. Nanoscalar matrix structures correlated with characteristics At intermediate (10:1) (50:1) ratios, had continuous structure showed sustained (11.1-65.3%) pH 6 over 49 days. This work developed into practical grade delivery systems antimicrobials.
