摘要: Polyphenol Oxidases (PPOs) are copper-containing enzymes that use molecular oxygen to catalyze the oxidation of monophenolic and ortho-diphenolic compounds (Fig. 1). Both PPOs their phenolic substrates widespread among higher plants fungi.
