摘要: The effect of chitosan films for shelf-life extension fresh fillets hake (Merluccius merluccius) and sole (Solea solea) was evaluated over a 15-day storage at 4 ± 1 °C. Fish wrapped in matrix were individually packaged air (AP) under vacuum (VP). Microbiological analyses (total aerobic mesophilic bacteria, Pseudomonas, H2S-producing lactic acid Enterobacteriaceae Listeria monocytogenes carried out during the shelf-life. microbial species inhibited (p < 0.05) by presence films, especially VP conditions. A significant increase lag phase reduction final population detected mainly total bacteria Pseudomonas. present work demonstrates biocide effectiveness as an internal layer packaging material, offering promising alternative which would enhance quality fish refrigerated storage.
