摘要: SUMMARY The major barrier for the effective use of high hydrostatic pressure sterilization products is strong resistance bacterial endospores to pressurization. In this study behaviour a strain Bacillus subtilis as representative endospore forming bacteria was used develop strategy their inactivation. Therefore various heat and treatments were investigated with respect potential produce sensitive vegetative cells. It could be shown that both increasing temperatures or pressures enhanced germination endospores. For example following treatment successful has been achieved: Induction at 500 MPa 15 min, followed by 30 min incubation 37°C atmospheric pressure, subsequent second pressurization 600 MPa. possible perform in one hour only.
