摘要: Abstract The analysis of antioxidants in different foodstuffs and especially fruits has become an active area research which lead to numerous antioxidant-assays being recently developed. Many exhibit inherent electroactivity, hence employing electrochemical methods could be a viable approach for evaluating the overall antioxidant capacity fresh produce matrix without need added reactive species. This work shows possibility using square wave voltammetry (SWV) other with disposable screen-printed carbon electrodes, quantify assess activity abundance specific antioxidants, mainly polyphenols selected soft fruit juices. Freshly squeezed black currant strawberry juices cultivars maturity stages were chosen according known differences their profile. As result increasing applied potential (0–1000 mV vs. Ag/AgCl) electroactive compounds present oxidised leading characteristic voltammetric profile each samples analysed.
