摘要: Physiochemical characteristics of Luffa cylindrica (L.) Roem and antioxidant activities its four extracts were analyzed. The chemical composition L. contained 93.69% moisture, 1.64% crude fiber, 0.52% protein, 0.27% fat, 0.06% ash. major minerals potassium, phosphrous, calcium. We also analyzed the organic acids, acetic acid succinic acid. In free amino β-aminoisobutyric showed highest concentration (100.74 ㎎/100 g), followed by phosphoethanolamine, urea, asparagine, valine. Glutamic was hydrolyzed with 1,039.99 g aspartic acid, lysine, arginine. Four from Roam, hot-water (LCH), cold-water (LCC), 80% ethanol (LCE), methanol (LCM), prepared. Total phenolic flavonoid levels LCE exhibited higher than three extracts. potential investigated using DPPH, ABTS, NBT assays. Of extracts, had relatively high capability on DPPH superoxide anion radical scavenging (12.13%, 16.88%, 26.61%). Based above results, it is suggested that an ethanolic extract a natural material for health food should be good ingredient functional food.
