摘要: UNLABELLED High fructose corn syrup (HFCS) was added at 5% to 40% Indiana wildflower honey and Ohio honeys from blueberry, star thistle, clover wildflower, an unknown source simulate adulteration. Unadulterated were also stored 37 oC 1 6 mo. The volatile composition measured by Selected Ion Flow Tube Mass Spectrometry (SIFT-MS). Most volatiles decreased in concentration with both increasing HFCS storage time. Furfural significantly increased all adulterated 1,3-butanediol, acetonitrile, heptane some honeys. During storage, the that maltol, furfural, 5-methylfurfural, 5-hydroxymethyl furfural acetic acid 1-octen-3-ol levels Soft independent modeling class analogy (SIMCA) used differentiate profiles of fresh accelerated for up 4 mo different. Acetic had most discriminating power thistle blueberry while greatest Adulteration reduced levels, but since they changed differently, SIMCA able adulteration storage. PRACTICAL APPLICATION  Analysis determined decrease no clear indicator found. However, can be distinguish or honeys,
