Antioxidant Capacity and Quality of Human Milk and Infant Formula Determined by Direct Current Polarography

摘要: Antioxidants present in infant food contribute to its nutritive value and provide protection from oxidative damage. Here, a direct current polarographic method, based on decrease of anodic the hydroxoperhydroxo-mercury(II) complex (HPMC) formed at mercury dropping electrode potential dissolution, was used determine total antioxidant capacity (TAC) formulas, human milk collected mothers full-term preterm infants, supplemented with fortifier, cow milk. TAC samples formula correlated protein content measured by Bradford method (Pearson correlation coefficient 0.605, p<0.001), while free thiol groups Ellman (0.779, p<0.001). The results obtained showed that, contrast 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay, HPMC enables specific insight into quality which reflects amounts content. significant contribution proteins most prevalent amino acids, particularly cysteine, arginine, phenylalanine, shown. Thus, might be useful monitoring formulas for infants before after supplementation fortifier.
