摘要: Large White × Landrace boars (n = 48) were used to determine the effect of dietary magnesium aspartate supplementation (MgAsp) on subsequent stress and meat quality indicators. Dietary MgAsp increased plasma levels compared with pigs fed control diet. Pigs MgAsp-supplemented diet had lower norepinephrine concentrations at slaughter than similar glycogen concentra- tions in longissimus thoracis (LT) biceps femoris (BF) muscle, whereas MgAsp- supplemented lactic acid LT BF muscle Negative handling before reduced when minimally han- dled abattoir. Comparison traits indicates that raised pH 40 min 24 h after slaughter. percentage drip loss, surface lightness L*, no PSE carcasses Also, negatively handled abattoir highest loss incidence other treatment groups. The results indicate can significantly improve ultimate reduce inci- dence meat.
