摘要: Microcapsules in food often have a shell with complex microstructure; the mechanical and structural properties of these shells affect response capsules to deforming forces release kinetics encapsulated components. In this chapter we will discuss number models which are typically used model behavior microcapsule shells, such as 3D film model, diffuse interface 2D sharp (or Gibbs dividing surface model). For last show how constitutive for fluxes mass, energy, momentum, along across interface, can be derived using methods from field non equilibrium thermodynamics; also give examples describe microcapsules flow field. Theoretical computational an important tool optimization design encapsulation system.
