摘要: The changes in phytate, phytase activity and vitro bioavailability of iron zinc during soaking germination three white sorghum varieties (Sorghum bicolor L. Moench), named Dorado, Shandweel-6, Giza-15 were investigated. Sorghum soaked for 20 h germinated 72 after to reduce phytate content increase bioavailability. results revealed that was significantly reduced from 28.16 32.16% 13.78 26.69% treatment 38.43 39.18% 21.80 31.27% treatments, respectively. Phytate 23.59 32.40% 24.92 35.27% Phytase enzymes will be activated drying equal form all varieties. proved the main distinct point is change as well specific different which showed no significant differences between used. improved a result treatments.
