摘要: Gingerols are the major pungent compounds present in rhizomes of ginger (Zingiber officinale Roscoe) and renowned for their contribution to human health nutrition. Medicinal properties ginger, including alleviation nausea, arthritis pain, have been associated with gingerols. Gingerol analogues thermally labile easily undergo dehydration reactions form corresponding shogaols, which impart characteristic taste dried ginger.
