Soybean peptide aggregates improved calcium binding capacity

摘要: Abstract Soybean peptides are believed to have calcium binding sites as Asp and Glu on side chains. However, the effects of peptide aggregation capacity remain unknown. Peptides with different capacities (F1 F2) were separated in this study by immobilized metal affinity chromatography. The apparent molecular weight distributions F1 F2 analyzed before after denaturation agents removal. Results showed that higher was more prone aggregate than F1. both decreased urea or 0.5% SDS treatments. removal resulted reaggregation recovery F2; no significant changes found for All findings implied soybean played an important role binding.
