摘要: The physicochemical properties of fresh borojo pulp and lyophilised humidified to different moisture levels were evaluated. Humidity (xw), soluble solids, oBrix, carbohydrates (major sugars, pectin (TP) fibre (TF)), pH, titratable acidity (Ac) total polyphenols determined. sorption isotherms also determined appropriately fitted the BET, GAB, Henderson Caurie models. phase transitions by differential scanning calorimetry (DSC). glass transition temperature (Tg) for samples as a function humidity, Tg maximally cryoconcentrated solution (Tg’ = -46.9 °C) formation last ice crystal in product (Tm’ -30.1) identified. variation xw was Gordon Taylor model, which enabled us obtain amount unfreezable water sample (Wg’=0.177 g water/g sample). combined analysis data show that ambient storage conditions (20 °C relative humidity between 35% 65%) do not ensure vitreous state is maintained. Therefore, addition high molecular weight substances recommended.
