摘要: Recent considerations have highlighted the great potential that can arise from extinct ecotypes above all in so-called marginal areas, where exploitation of these crops may have environmental protection value, and addition, a social value promoting employment areas subjects to depopulation. Moreover, many studies confirmed regularly consume beans other legumes helps prevent cure several degenerative diseases. Therefore, present work, four “niche” bean were characterized morphological health point view exalt their territorial vocation give it sort identity card or food fingerprint. Beans by chemical composition, fatty acid, sterols’ profile, micro/macroelements. The results this study suggest biochemical characteristics different local Mediterranean be considered high nutritional quality consumption is also way preserve agricultural biodiversity. Among varieties examined, there someone richer components (sterols, polyunsaturated acids, some macroelements) than others. Polyunsaturated acids predominated samples, ranging 44 72% total while they exhibited always following phytosterol profiles: β-sitosterol > stigmasterol > ∆5-avenasterol > campesterol. Brassicasterol was absent analyzed samples. (dry matter), sample Q had highest concentration Potassium (14.41 g Kg−1) calcium (2.32 g Kg−1), same elements resulted lowest M (11.3 0.82 g Kg−1, respectively). Magnesium content major ecotype Z (16.46 g B (15.90 g Kg−1). Concerning mean concentrations microelements order found be: Fe > Zn > Mn > Cu > Mo > Ni. Finally, ATR–FTIR spectra could an immediately evaluation semi-quantitative macronutritional
