摘要: The effect of bovine plasma protein (BPP) on the inhibition autolytic activity and its gelling properties a concentrate (PC) obtained from jumbo squid (Dosidicus gigas) mantle were investigated. Sols gels prepared PC by adding different amounts BPP (0, 1, 2%). Dynamic oscillatory measurements indicated that systems with 1% had higher elastic modulus (), in which hydrophobic interactions favored. Concerning technological textural quality gels, caused greater water holding capacity (WHC), force, cohesiveness, elasticity, probably due to improvement electrostatic during gel formation. Scanning electron microscopy (SEM) allowed visualization formation more rigid ordered less porosity when was added. Therefore, addition improved proteins extracted giant squid.
