摘要: Abstract Processed meat products are presumptive sources of mutagens and genotoxins for consumers. Several epidemiological studies have reported that these products' high intakes a positive link with cancer incidence. In Algeria, industrially processed widely consumed. However, there no earlier involving their genotoxic activity. For this end, the current study aimed at evaluating mutagenicity genotoxicity some representative sold in popular supermarkets. All samples were extracted by established method, using both polar non-polar solvents. The extracts was assessed Ames test, four strains Salmonella typhimurium presence absence metabolic activation, subsequently treat wash assay showing biologically significant results. determined TK6 human lymphoblastoid cells vitro micronucleus micromethod. results showed all analyzed induce mutagenic one induced increase number micronucleated cells. Our findings indicate importance genetic damage detection taking measures to suppress or reduce exposure harmful contaminants encourage further research investigating effects worldwide.
