摘要: The effect of water activity (aw = 0.95, 0.98 and 0.995), temperature (15, 25 30°C), incubation time (7, 14, 21 28 days), their interactions on growth moniliformin (MON), beauvericin (BEA), fusaproliferin (FUS) fumonisin B1 (FB1) production by two strains Fusarium temperatum isolated from Argentinean maize were determined in vitro sterile layers grains. results showed that there was a wide range conditions for mycotoxins F. temperatum. Both found to grow faster with increasing aw at 30°C. In relation mycotoxin production, the produced more FUS than other regardless or evaluated (maximum 50,000 μg g(-1)). For FUS, MON BEA, maximum levels observed 30°C (50,000, 5000 2000 g(-1) respectively). lowest these three detected 15°C 0.95 (1700 100 respectively), (400 BEA). FB1 (1000 At all temperatures combinations an increase toxin concentrations incubation. days. Statistical analyses aw, temperature, time, two- three-way between them significant effects its versatility represents toxicological risk field also during grain storage.
