摘要: Due to growing concern of consumers about chemical residues in food products, the demand for safe and natural is increasing greatly. The use additives such as spices herbal oil seasoning agents their antimicrobial activity has been extensively investigated. This paper discusses efficacy aqueous extract mint (Mentha arvensis) betel (Piper betle) on mycelial growth citrinin production Penicillium citrinum. present investigation revealed that inhibited up 73 % without inhibiting mycelium growth. decreased with increase concentration observed from data obtained High pressure liquid chromatography. samples also showed reduced cytotoxicity HeLa cells. On other hand resulted stimulatory effect study potential be used safely restraining contamination.
