摘要: The combined effects of ultraviolet (UV) light C (0.34 to 20.13 kJ/l 2 ) and superatmospheric O2 (>85%) packaging on the respiration rate, atmospheric composition, microbiological growth nutritional quality fresh-cut arugula stored for 10 days at 5C were studied. All treatments performed under increased levels exhibited a reduction in rate throughout cold storage. High microbial load raw material found. UV-C radiation enabled an initial about 1 1.5 log units mesophilic psychrotrophic counts, respectively. However, this treatment was not effective mold control. In addition, noticeable increase occurred total antioxidant capacity polyphenol content without affecting visual appearance leaves. radiation, as sanitizing method, combination with conditions maintains overall is feasible alternative industrial-scale enforcement.
