摘要: Zeta potential (ζ) analysis was investigated as a means of rapid determination residual protein content rice flour during processing starch. A sample suspended in 0.3% sodium hydroxide solution to obtain slurry which subjected extraction by decanter for five cycles. The samples from all cycles were collected, neutralized, dried, sieved through 200 mesh sifter and ζ analysis. data values (y) chemical (x) six used regression develop an empirical equation express the based on value alone. result obtained different contents buffer pH 12 yielded standard linear y = -1.29x-12.51.
