摘要: We present an optical coherence tomography based methodology to determine freshness of soft tissue samples by evaluation their interaction with low frequency electric field. Various biological tissues different stages were exposed current. The influence the field on was observed and quantified double correlation (dcOCT) approach developed in house. quantitative — dcOCT shows increase its relative magnitude from fresh non-fresh ones. presented has a strong potential food sciences for meat quality.
