摘要: The most common connective tissue research in meat science has been conducted on the properties of intramuscular meat. purpose this study was to investigate histological tissues left and right Quadriceps femoris muscle (as red meat) Pectoralis superficialis muscles white native chickens influence sex these properties. A total 40 adult healthy (56 days) both sexes (20 female 20 male) were used. After fixation 10% buffered formalin solution, sections prepared, using routine techniques. Tissue samples stained by hematoxylin eosin a variety special techniques for determination types fibers. conventional revealed that except endomysium which similar muscles, other layers varied between leg breast affected sex.
