摘要: Abstract THE vitamin B12 content of fresh and stored shell eggs has been determined as part a study changes in composition occurring when are kept cold storage. Losses nutrients during holding storage importance, because large numbers for extended times usually several days old before they eaten. According to previous work from this laboratory, twelve months lost 18 percent the niacin, 51 B6, 14 riboflavin, 8 pantothenic acid, 27 folic acid (Evans et al., 1951b, c, 1952a, b, 1953a) but did not lose choline nor biotin 1951a, 1953b). Data herein presented which show loss that had months.
