摘要: The use of germinated cereals and legumes in reducing bulk weaning foods was investigated. blends were formulated studied for their viscosity, acceptability, quality. Germinated rice-mung-bean, rice-cowpea, corn-mungbean corn-cowpea (germination period 72 hr rice/corn 48 mungbean/cowpea) indicated viscosity reduction from about 20,000 cps to 3,000 at the 70:30 ratio with concomitant good scores general acceptability. About 400 mL gruel prepared formulations met l/3 RDA protein energy requirements infants. products found stable 6 months, mi-crobially safe, well-tolerated by
