Antibacterial and antibiofilm activities of linalool nanoemulsions against Salmonella Typhimurium

摘要: Abstract Linalool is the active constituent of essential oils several plant species like coriander, rosewood and cinnamon, which known to have strong antibacterial activity. However, its application in food systems limited because low water solubility, high volatility stability. The present study was undertaken overcome such problems by encapsulating linalool into nanoemulsions using Tween 80 ultrasonic assisted emulsification. stable with a mean droplet diameter 10.9 ± 0.1 nm obtained at 1:3 (v/v) ratio 80. antibiofilm activities were further investigated. showed twofold enhanced activity against Salmonella Typhimurium through their increased ability disrupt cell membrane integrity. Moreover, compared pure linalool, an 11.5% higher Nanoemulsions also effectively reduced S. biofilm on surface cut pineapple. Sensory analysis acceptance fresh pineapple treatment. Therefore, results indicated potential use as natural agent Typhimurium, could find applications industry.
