摘要: Natural colorants from plant-based materials have gained increasing popularity due to health consciousness of consumers. Among the many steps involved in production natural colorants, pigment extraction is one most important. Soxhlet extraction, maceration, and hydrodistillation are conventional methods that been widely used industry laboratory for such a purpose. Recently, various non-conventional methods, as supercritical fluid pressurized liquid microwave-assisted ultrasound-assisted pulsed-electric field enzyme-assisted emerged alternatives advantages former terms smaller solvent consumption, shorter time, more environment-friendliness. Prior step, pretreatment plant enhance stability pigments another important step must be carefully taken care of. In this paper, comprehensive review appropriate chlorophylls, carotenoids, betalains, anthocyanins, which major classes pigments, provided by using yield assessment criteria.
