摘要: Pot honey is the most abundant in forest, produced by many species of stingless bees (Meliponini) Huottuja (Piaroa) community Paria Grande, Venezuela. However, commercialization this low, and false honeys, which are sold labelled bottles, easily found market. This study has investigated ability an untrained panel Piaroa assessors to differentiate genuine from pot using Free-choice profile. sensory method allows consumers use their own words describe quantify attributes a product. The light amber Melipona fuscopilosa "isabitto" dark Tetragona clavipes "ajavitte", "angelita" Apis mellifera honey, were evaluated. Sensory related appearance, color, odor, flavor mouthfeel elicited qualitative session quantified 10-cm unstructured line scales individual score sheets. data analyzed Generalized Procrustes Analysis (GPA). bidimensional plot successfully separated honeys. first dimension (39.50%) was represented low viscosity, fermented odor sour taste, whereas second (24.69%) fruity flavor. differentiated five types terms perceived characteristics.
