摘要: Potatoes are one of the main foods throughout world contributing to daily intake nutrients. This work studies relationship among some physical characteristics tubers from 35 potato varieties, total phenol and flavonoid content their antioxidant potential. Some significant differences were found depending on variety. Thus, Fleur Bleue, Violetta, Yona, Stronga Flamenco had highest capacity. is apparently a consequence presence purple red pigments in skin flesh. A regression model for radical scavenging activity, value coordinate a* (CIElab scale) tuber flesh was obtained.
