摘要: The purpose of this work was to estimate the collagen content frankfurters by hydroxyproline quantification. Frankfurters were produced at small, medium and large plants, according target market (local, regional national). Determination made colorimetric method. results showed that had different standards in manufacturing, since statistically different. Samples from size industry presented lowest (0.45%), followed samples plant (0.64%). small highest (0.89%). These data analytical procedure can be used for quality classification frankfurter based on content.
