Public perceptions of fiber in foods

摘要: The nutritional value of consuming fiber has received much recent attention, yet little is known about how the public perceives in foods. We asked a sample 517 adults to name foods which are high and low explain what made food high‐fiber food. Nine ten could at least one food, three four low‐fiber most frequently named were grains, followed by vegetables fruits. Foods reported often as fruits/vegetables, sweets/snacks meats. Two people able provide some explanation why fiber. Food recognizable concept for U.S. adults, but additional nutrition education may be useful more complete knowledge.
