Chemical and Sensorial Characterization of Tropical Syrah Wines Produced at Different Altitudes in Northeast of the Brazil

摘要: Over the years, viticulture has expanded to new regions outside temperate zones, such as Northeast Brazil, India, Thailand, Myanmar, Vietnam, Bangladesh and Venezuela, characterized by production of tropical wines. It is important for productive sector comprehend effects grapevine interaction with characteristics each region on wines composition. In this study, composition Syrah from two different altitudes in Brazil were analyzed methodologies characterize chemical compounds sugar, acids, minerals, phenolics (anthocyanins, flavonols, stilbenes condensed tannins) sensory profile. The Bahia (1100 m altitude) obtained high concentrations parameters related color, monomeric anthocyanins, oligomeric tannins. Wines low altitude region, Pernambuco (350 higher flavonols (kaempferol, isorhamnetin, quercetin rutin) polymerized studied was influenced altitude. A trend towards most phenolic observed during years study. Regarding profile, fruity, floral, herbaceous empyreumatic attributes aromatic highest scores 350 other dependent year harvest.
