摘要: This chapter discusses and reviews analytical methods that have been developed (over the past decade) for determination of several selected, naturally occurring mycotoxins in human foods. The selected include following: aflatoxins B1, B2, GlG2and M1; fumonisins B2and B3; ochratoxin A; patulin; trichothecenes (deoxynivalenol, diacetoxyscirpenol, nivalenol T-2 toxin) zearalenone. Emphasis is placed on new techniques are being applied, while trends (related to various aspects associated with analysis different foodstuffs) also discussed. Areas particular concern selective extraction target toxins from substrates, sample purification, (where necessary) derivatization, detection confirmation. Method analyst performance criteria presented.
