摘要: Objective dietary intake markers for meat would be useful to assess in observational studies and as compliance intervention studies. A number of compounds are specific compared with most other items but there is some overlap between protein rich foods. single have been analysed urine, plasma, serum or hair samples their relationship total intake. Among potential urea, creatine, creatinine, carnitine, carnosine, anserine, ophidine, 1- 3-methylhistidine, sulphate sulphite. Anserine 1-methylhistidine come close being meat-specific true quantitative biomarker may not exist. Modern profiling techniques increasingly used look biomarkers constructing them from latent information complex profiles. Metabolomics by NMR spectroscopy urine has also applied search markers. Studies on metabolomics shortly reviewed here.
