摘要: Psychotrophic bacteria were isolated from the wall, bottom and homogenization spade of cooling milk collective tank, after performing hygienic procedure . These isolates identified characterized on ability in producing protease, lipase lecithinases, also to determine susceptibility antimicrobial agents. From 32 tanks, located different cities South Minas Gerais, samples their surface collected by swab technique, which analyzed serial dilutions plated trypticase soy agar incubated at 7 oC for 10 days. Then, selected biochemical identification using kits API 20NE (Biomerieux-Brazil) Bactray I II (Laborclin-Brazil). One hundred ninety-seven relation lecithinase production. these isolates, 21 testing resistance antibiotics. Bacterial countings <1 8 CFU/cm 2 detected, with prevalence Serratia sp., Klebsiella besides some species Pseudomonas genus. The showed high proteolytic lipolytic activity, although activity was less evident. multidrug observed 54% analyzed. Keywords. psychotrophic bacteria, antibiotic resistance, lipase.
