摘要: Abstract Alginate-coated gelatin microspheres were produced to encapsulate the probiotic Bifidobacterium adolescentis 15703T with objective of enhancing survival during exposure adverse conditions gastro-intestinal tract. Gelatin cross-linked non-cytotoxic genipin and coated alginate by Ca 2+ from external or internal sources. The coat prevented pepsin-induced degradation in simulated gastric juice (pH 2.0, 2 h), resulting significantly ( P −1 for -source methods, respectively, while 6.7 6.4 log cfu ml obtained cells uncoated free cells, respectively. This study presents a novel microencapsulation method, which protects bifidobacteria environmental conditions.
