Formulation of shear rate sensitive multiple emulsions

摘要: This work mainly concentrates on the formulation of W/O/W multiple emulsions capable breaking and releasing their inner aqueous phase under shear rates compatible with agroalimentary, pharmaceutical cosmetic applications. Three kinds were studied: one a high concentration primary emulsion, not viscosified in external phase; gelified synthetic polymer (Carbopol 974P((R))); other thickened chemically modified cellulose (hydroxypropylcellulose). The results this study show influence composition fragmentation release as function rate. Despite these differences behavior respect to rate, each emulsion fits Taylor's theoretical framework, indicating that bursting mechanisms globules are same whatever emulsions.
