摘要: This study describes the evaluation of potentially more sensitive methods for recovery Salmonella cells injured by heating (54 to 60 degrees C) at different water activity values (0.65 0.90, reduced using equal portions glucose and fructose). These included gradual rehydration, use diluting media with added solutes or blood, addition blood plating agar, incubation temperatures times. Gradual rehydration that had been challenged low 0.70) high temperature markedly improved recovery, measured as a >50% increase in time obtain 3-log10 reduction cell numbers, compared dilution into activity. Adding sucrose, glycerol, (maximal diluent) did not improve but agar containing recovered approximately 38% than nutrient agar. Prolonged plates allowed presumably extended lag periods, significantly higher rates after 48 h 37 C 24 (P = 0.05). work highlights recovering method specific nature injury, better prediction food safety success processing can be made.
