UV-B-mediated flavonoid synthesis in white asparagus (Asparagus officinalis L.)

摘要: Abstract The popularity of white asparagus (Asparagus officinalis L.) spears is mainly due to its unique flavour and high concentration health promoting compounds. Physical elicitors that activate plant defence systems are known cause an increase antioxidant compounds in tissue, such as phenolic compounds, their corresponding enzymes (e.g. phenylalanine ammonia- lyase, [PAL, EC 4.3.1.5], peroxidase [POD, 1.11.1.7]). objective this work was evaluate the impact UV-B on PAL POD kinetics, well characterize resulting changes flavonoid composition different morphological sections (apical basal) harvested spears.
