Preliminary results indicating game meat is more resistant to microbiological spoilage

摘要: The aim of this study was to investigate whether game meat has an inherent antimicrobial activity. To test this, samples from impala, nyala, warthog, wildebeest, ostrich, zebra and as controls; beef, mutton pork were challenged with S. aureus the growth determined after overnight incubation at 37 °C. Concluded results study, animals repressed much stronger than that domestic animals. Further studies determine phenomenon is applicable other are in progress.
