摘要: The complexity of the consumers' behavior has taken food industry to a new level dynamism. Therefore, understanding factors that influence this is decisive for differentiation products niche markets and even adjust supply according expectancy. This article proposes conceptual model identify influencing beef consumption in Brazil. methodological approach was characterized by systematic review through synthesis research related directly topic. 76 papers published during 2000-2014 period, including official documents (statistics), full papers, abstracts, proceedings, reports, were selected. Four main influences consumer and/or consumption: sociocultural, economic, health/food, environmental. Among these dimensions, there an emphasis on recent publications health/food environment. compilation analysis enabled conception proposed suggests consideration four dimensions consumption.
