摘要: Abstract Two production systems, pasture and sheepfold based on lambs fed concentrates ad libitum was evaluated for carcass meat quality of slaughtered at body weights 24 28 kg. There no effect system growth rate lambs. In sheepfold, commercial dressing values slaughter were heavier than in those raised with more dorsal fat thickness (1.6 mm vs. 1.1 mm), kidney knob channel (1.6% 1.2%) a greater percentage leg (8.5% 6.6%). Lambs had fat. Meat quality, pH, water-holding capacity collagen content parameters not affected by the systems. The color longissimus dorsi muscle somewhat darker fattened pasture, but differences seen rectus abdominis muscle. both subcutaneous intramuscular two cuts studied (leg loin), presented lower stearic acid (C18:0) higher proportion palmitic (C16:0) linoleic (C18:2) acids, thus SFA one TUFA, while better ( n −6)/( −3) ratio observed pasture. displayed PUFA PUFA/SFA levels oleic (C18:1) fatty acids myristic (C14:0) depots.
