摘要: Abstract 2-amino-9H-pyrido[2,3-b]indole and 2-amino-3-methyl-9H-pyrido [2,3-b]indole (amino-α-carbolines), potent mutagens toward Salmonella typhimurium TA 98 100, have been isolated from the pyrolysis products of soybean globulin structures established by X-ray analysis. 3-amino-1,4-dimethyl-5H-pyrido[4,3-b]indole 3-amino-1-methyl-5H-pyrido[4,3-b]indole (amino-↔-carbolines) identified as mutagenic principles in tryptophan pyrolyzate were not detected globulin.
