Effect of temperature on the antioxidative action of inhibitors in lipid autoxidation

摘要: Purified lard triacylglycerols have been oxidised at 25, 50, 75 and 100°C in the presence absence of 0.2–2.0 g kg−1 (0.45–10.3 mmol litre−1) antioxidants α-tocopherol ferulic acid. Increasing temperature does not influence effect acid on induction period or rate autoxidation, is more effective extending reducing autoxidation as increased. The substrate oxidation increases with increasing concentration, especially lower temperatures, but decreases concentration. This behaviour explained terms participation antioxidant molecules radicals process. High-temperature results can be extrapolated only to room when no change occurs antioxidative mechanism.
